I picked up a 3120XP real reasonable. It starts and runs. I am somewhat concerned about a loping idle. I did not run it long enough to warn up, so as not to hurt it. On the smaller Stihl I am used to a loping idle is a sign  of an air leak... But this saw is a totally different animal. It sounds a lot like a high performance cam is in it.

What are your thoughts?

It also has a broken chain brake handle.

The metering valve diaphragm may be stiff and causing a slight mixture variation?

As long as you don't run it lean at high speed, I doubt you will hurt it?

The bigger saws have a more pronounced lop anyway.

Either pressure/vac test or see how it runs up top.

The earlier ones had adjustable carbs (H/L) later ones have only an L adjustment. Walbro WG-6 IIRC.

This saw has a 36" bar on it. I am thinking of getting a shorter one. 24-28"
Thoughts?

The saw will pull just about anything you put on it in almost any species and size tree. That being said it is more a case of intended use than anything else. I have rebuilt several of those saws, they are quite heavy when you put a 36 on them, not something to cut fire wood with all day.
