Yeah I'm leaning towards using the BB372, but am now worried a bit by the skirt difference in length. Would this create any dramas??

What skirt differences? 

Maybe you thinking confusing the 272 with the short skirt?

Give the BB372 a try. Looks like the skirt is a touch wider then an 064 too.

Do you think the bb372 cylinder would be the same fit into a solo 680 crankcase, as once I pull it apart my cylinder may be scored, and require honing or replacement...

I'm betting pin bosses on BB372 wont need to be touched. If so very little. Mine didnt need touched for the 475. But 064 would have too.

I have a crank I can check on a 425 505 out I can check and betting mine are just like 371 crank, except 425 etc are course thread instead of fine.

I'll check when I get home from work. I'm pretty sure the 680, 690 and 603 are the same size.
